Rate this recipe on a scale of 1 to 5


2 cups all-purpose flour
1 teaspoon baking soda
2 1/2 teaspoons cinnamon
1/2 teaspoon salt
2 cups brown sugar
1 cup unsweetened applesauce
1 teaspoon vanilla
2 large eggs
3 cups shredded carrots
1/2 cup chopped walnuts


Preheat oven to 350 degrees.

Grease a 9-inch square pan; dust lightly with flour. Set aside.

Mix the first 5 ingredients together.

Add the applesauce, eggs and vanilla. Beat for about a minute on the slow speed of the mixer until well blended.

Fold in the carrots and nuts. Pour into the prepared pan.

Bake for about 35 to 40 minutes. Test with a toothpick in the center. Remove from oven when done. Cool in the pan, and frost when completely cooled.
