Fresh Vegetable Sandwich on Whole Grain Bread

A cool, refreshing, and nutritious lunch.

Ingredients

2 slices whole grain bread
Mayonnaise or other sandwich spread
Sliced cucumber, tomato, dill pickle, green pepper, onion

Directions

Put mayo or spread on both slices of bread to taste. Add slices of cucumber, tomato, dill pickle, green pepper, and onion to one slice of bread, then top with the other. Cut in half.

Comments

You can add salt, black pepper, garlic powder, etc., to taste. You can use virtually any type of vegetable -- try radish, olives, mushrooms, etc. Use your imagination to mix and match! Add a slice of cheese if you like, or serve on toast.
