Spicy Volcano Rice

Spicy Volcano Rice

1 1/2 cups uncooked brown rice
5 cups water
1 can (10 oz.) diced tomatoes & green chilies (hot variety)
1 teaspoon cajun seasoning
1 cup chopped green bell pepper
4-5 leaves of lettuce
1 can (2.25 oz.) sliced black olives, drained


Bring water to a boil in a medium saucepan. Stir in rice and return to a boil. Cover, reduce heat and simmer for 25 minutes. The rice will be tender but still slightly grainy.

Stir in chopped bell pepper, cover, and continue simmering for another 3 minutes. Drain.

Stir in the whole can of tomatoes (with the juice) and the cajun seasoning. Cover and let stand another 3 minutes.

Put a bed of lettuce leaves into a medium serving bowl. Empty pan of rice onto the lettuce, forming it into a mound. Hollow out a crater in the center of the "volcano" and put sliced olives in it.


You may substitute the mild variety of tomatoes if you prefer, but it will not be as spicy.
